Comfort and Joy

I'm bouncing back.

I feel a little better and I do a little more every day. Today I felt good enough to prepare one of my favorite dishes, Italian beans and greens. It's not calorie dense, but it's packed with nutrients and flavor.

I wrote about beans and greens on my food blog, Open Mouth, Insert Fork.

That looks so good! I love greens of any kind, and some of the dried beans and peas. But, I always feel so smug-healthy when I eat them. Honestly, I feel an electric charge of energy. Lately I've thought to try an Armenian lentil soup that includes apricots -- ever heard of such a thing -- apricots, eggplant, tomato, and some spices.

The Armenian lentil soup sounds delish!

The irony is that I need to gain 25 pounds, so I'm on a 2,500 calorie a day diet. The beans and greens were very filling, but don't have enough calories. So I now have to make up my stuffing myself with pistachios, almonds, Oreos and milk.

Oh, I'm coming up with my junk food list at its junkiest. Hope you won't lose all respect for me. If you even choose one, I'll be able to enjoy it vicariously (or I can only hope it will be vicarious. I have no control.)

Glad you're feeling better!
The beans and greens sound good and so do the things you're stuffing yourself with?
