Sounds good. I have gotten so tired of my normal veggie routine -- mainly just steamed -- that sometimes I skip the vegetables all together. Not a good idea. I like your suggestions! I think I'll try the cauliflower. That looks hard even for me to mess up!

Blech! I think I would stop eating vegetables too if I only ate them steamed. I have broccoli in the fridge that I bought on sale and am looking for a more interesting way to cook it besides steamed.

And you're right - the great thing about roasting vegetables is that you can't mess up.
